Tequila Barajas

Tequila Barajas is a rare artisanal benchmark, driven by the expertise of its Master Tequilero, Gerardo Barajas. A precursor of the «desfibrador» extraction method, his distinctive know-how reveals aromatic profiles impossible to obtain using more conventional techniques. This approach favors oxygenation and precise extraction of the pulp, opening the way to new expressions of agave.

The agaves come exclusively from the lowlands of Jalisco, an area renowned for its lemony, herbaceous nuances. Prolonged cooking deepens the notes of cooked maguey, bringing a natural complexity to each cuvée. Fermentation uses indigenous yeasts in the ambient air, subtly infusing a spicy signature reminiscent of cinnamon. Double distillation in stainless steel guarantees technical purity and controlled aromatic consistency.

Reposado, Añejo, and Extra Añejo are aged in meticulously selected barrels: eight months in French oak for Reposado, twenty-eight months in American oak for Añejo, and four years in bourbon barrels for Extra Añejo. Each expression strives for a balance between depth, elegance, and precision.

Annual production is deliberately limited in order to ensure impeccable quality at every stage and preserve the uniqueness of this exceptional tequila.
