Tequila

Tequila is one of Mexico's most emblematic spirits, deeply rooted in its terroir, history and culture. Made exclusively from the blue agave (Agave tequilana Weber, of the blue variety), it is recognized by an appellation d'origine contrôlée and can only be produced in certain regions of the country, mainly in the state of Jalisco. Much more than a simple spirit, tequila embodies a craft tradition handed down from generation to generation, and offers a rich palette of styles.

There are several categories of tequila, depending on how long they have been aged: the Blanco (or Plata), unaged or rested for less than two months, which expresses all the plant freshness of agave; the Reposadoaged between two months and a year, which gains in roundness and complexity. Añejoaged between one and three years, developing woody and spicy notes; and finally the Extra Añejoa prestigious category introduced in 2006, for tequilas aged over three years, with a rich, structured profile.
