History of a rum factory 2006 In 2006, Yves Assier de Pompignan embarked on a bold and exciting project: the creation of a new rum distillery that would embody the history and richness of the Antilles terroir. Indeed, the takeover of Habitation du Simon, ideally situated at the heart of an exceptional terroir, and his unwavering passion for his island and its riches, have enabled Yves Assier de Pompignan to work for many years on creating a rum brand combining tradition and modernity.

2010 Aging cellar In 2010, the decision was made to launch the project, and work began on selecting the great old rums destined for our blends. An ageing cellar equipped with a barrel previously used for Cognac and a laboratory are created at l'Habitation. Our first selections, aged between 6 and 11 years, are put back into our 320-litre French oak barrels.

Innovative distillation At the same time, the search for an innovative distillation solution that was both qualitative and traditional led us to choose an all-copper Charentais alembic, complete with a seven-plate column. Temperature-controlled fermentation vats allowing long fermentation periods were chosen to obtain wines with strong aromatic potential.

2015 The long and tedious administrative procedures finally culminated on December 31, 2015 in the authorization (the first in Martinique in decades) to open a distillery for the production of Rhum Agricole.

2016 Work then began on the rum distillery, which was installed in a former 18th-century sugar refinery at the heart of the estate. The main house was also refurbished to welcome visitors for tours and tastings in an exceptional setting.

Finally, after 10 years spent learning and imagining, Yves Assier de Pompignan and his team inaugurate the brand new A 1710 distillery at l'Habitation.
