Originating in the lowlands of Jalisco, the Tequila Barajas Anejo 38% 70cl reveals a radiant amber hue and a silky, structured body, carried by an aromatic palette of candied orange, jasmine, plum, and vanilla. Notes of caramel, delicate spices, cooked agave, cinnamon, and pepper assert a rich and nuanced profile, enhanced by a hand-crafted and hand-painted bottle, each signed by the artisan responsible.
It is made from lowland agaves using the «desfibrador» extraction method, developed by Master Tequilero Gerardo Barajas to promote oxygenation and extract a deeper expression from the pulp. Prolonged cooking intensifies the notes of cooked agave, while native yeasts add a hint of cinnamon. The Tequila Barajas Anejo 38% 70cl is distilled twice in stainless steel, then aged for twenty-eight months in single-use American oak barrels. Production is deliberately limited, and each bottle requires ten days of craftsmanship involving eight experts, including seven hours devoted exclusively to painting.
On tasting, the Tequila Barajas Anejo 38% 70cl reveals a balance between caramelized sweetness, cooked agave, cinnamon, pepper, and hints of citrus, supported by a mineral finish. A rare expression that illustrates demanding technical mastery and meticulous craftsmanship.
